Our chef personally selects
fresh seafood and seasonal vegetables
with expert care.
Enjoy the gentle flavors of simmered vegetables cooked in a savory dashi, the melt-in-your-mouth texture and rich taste of sashimi, and the aromatic delight of perfectly grilled dishes.
We use konbu, katsuobushi (dried bonito flakes), and a deeply flavorful soup extracted from fish bones to create our dashi, adding layers of depth to each dish.
By weaving modern sensibilities into time-honored techniques, we draw out the distinct qualities of each ingredient, offering new discoveries with every bite.
The vibrant plating reflects the essence of each season, while the enticing aroma and the sounds of cooking complete the unique “feast” that can only be experienced at Uokatsu.

We have just eight counter seats in our small restaurant.
This limited seating allows for attentive hospitality and a luxurious, private atmosphere.

The Story of Chef
Katsuhiko Yanagibashi,
Guided by the Sea
Born to a father who ran a fish wholesale business at the market and a mother who managed a small restaurant in a downtown neighborhood, Chef Katsuhiko Yanagibashi grew up surrounded by fresh seafood and his mother’s home cooking.
Naturally drawn to the culinary world, he trained at a high-end “obanzai” restaurant in Ginza, devoting more than 20 years to honing his skills in Japanese cuisine.

With the traditional techniques he mastered during his apprenticeship and an ever-growing curiosity for diverse regional food cultures, he opened his first restaurant, “Sakana-ya Uokatsu” in Kyobashi.
Determined to push his culinary boundaries further, he later opened “Ginza Uokatsu” in Ginza—an area renowned as a pinnacle of gastronomy—continuing to refine his craft.It was in Ginza that he created his special inari sushi, “Yazaemon Inari,” to offer in homage at the nearby Hodō Inari Shrine. This original inari sushi became so popular that queues formed even before the restaurant opened, even on weekdays.
Finally, as the culmination of his journey, he opened Uokatsu in Nagata-cho, offering a counter-only dining experience where he can personally attend to each guest. Thus, guided by the sea and backed by a wealth of experiences, Chef Yanagibashi continues to delight guests, satisfying both heart and palate day after day.
